Description

The grapes of this wine are carefully selected in harvest boxes and then carefully checked in the cellar. Bye Bye Baby is pale straw yellow in color with a fine perlage and good persistence. On the nose, it reveals aromatic and exotic fruit notes with delicate floral hints. In the mouth, it is intriguing, with an excellent balance between acidity and freshness which enhances its persistence.

The name and label of this wine were inspired by the story of the Teste di Moro (Moor’s heads). According to the legend, a girl fell in love with a Moor, who returned her feelings. Despite the passion, this love story was destined to be brief.The girl eventually discovered that her beloved had to go back to the East, where his wife and children were waiting for him. Consumed by anger and jealousy, the girl murdered the Moor while he was asleep, decapitating him.The man's head would later be used as a pot for a basil plant.

Grape variety: Catarratto, Grillo
Alcohol content: 12% vol
Production area: Northwestern Sicily
Vinification: Hand harvesting in boxes with careful selection of grapes, then destemmed upon their arrival at the winery. A short cold maceration is carried out followed by a gentle pressing. After an aging period of about 4 months on the lees at a controlled temperature, the base wine is transferred to an autoclave, where it undergoes the long Charmat method to achieve its sparkling character.
